Guide to Ganache

I really love working with chocolate ganache to cover my cakes, specially if I’m covering them with Modeling chocolate after. I also like to use an acrylic disk in the bottom to get smooth sides faster. (Comment the word “disk” if you’d like to buy one) I like to use a 2:1 ratio to cover my cakes. Ganache is a great alternative to use to coat your cake during the high heats of summer ☀️ Don’t get me wrong…ganache still has a tendency to soften and melt but it does give you that extra stability.
