Galette des rois (king cake) is a traditional almond cream and puff pastry cake eaten on January 6th to honor Epiphany.

The recipe will still work, but the cake will be lighter ... until homogeneous. Add the almond flour and salt, then whisk until fully incorporated. Whisk in the rum; set aside.
